  1. This is not necessarily a Christmas recipe, but rather a great Fall dip recipe. I make it every October served with slices of apple, but any fruit or bread would be delicious!
    1 8oz softened package of cream cheese
    1/2 C canned pumpkin
    1/4 C sugar
    3/4 tsp pumpkin pie spice
    1/2 tsp vanilla

    Beat all ingredients until smooth and creamy. To keep, cover with plastic wrap and keep in fridge. Enjoy!

    QUICK AND EASY PUMPKIN PIE BARS

    1 package 2-layer-size yellow cake mix
    1/2 c butter, melted and cooled
    3 eggs
    1 15 oz. can pumpkin
    1 5 oz can (or 2/3 c) evaporated milk
    1/2 c packed brown sugar
    2 T sugar
    2 T butter, softened
    Whipped cream

    Pumpkin pie spice, as follows:
    1 T cinnamon
    1 t ginger
    1/4 t cloves
    1/4 t nutmeg

    Combine dry cake mix, melted butter, and ONE egg. Beat until combined. SET ASIDE ONE CUP of the cake-mix mixture.

    Spread remaining cake-mix mixture in an ungreased 13x9x2 baking pan. Press to form an even crust.

    In a medium mixing bowl, beat together the remaining eggs, the pumpkin, evaporated milk, brown sugar, and 2 1/2 teaspoons of pumpkin pie spice. Pour pumpkin mixture over the crust in prepared pan.

    Combine the reserved cake mix mixture, the sugar, the 2 T softened butter and the cinnaomon. Dot evenly over the pumpkin mixture. Bake in a 350 degree oven for 45 to 50 minutes or till a wooden toothpick inserted neart the center comes out clean.

    Cool in pan on wire rack. Cut into triangles or squares. Serve with homemade whipped cream mixed with a little brown sugar and then sprinkle a little pumpkin pie spice on top.

  3. My favorite is white chocolate covered peanut butter ritz crackers (just dip the ritz sandwich crackers into melted white chocolate bark and then let harden)...mmmm, I could eat a whole batch!

  4. This thread of comments is making me hungry and putting me into a cooking mood. Now to just find a way to keep the baby calm long enough to really get into things. OH NO, what am I going to do about Thanksgiving. I'll cross that bridge later.

    For now, does anyone have a good recipe that utilizes fresh pumpkin. My daughter went to the pumpkin patch and wants to make a pie or soemthing.

    My favorite recipe is not really holiday specific. This is a traditional family casserole that all of my Mother's children and grandchildren now make for their families. Whenever we have a get together you know it has to be in attendance. It is a simple asparagus casserole. You layer the following ingredients in a casserole dish: sweet peas, asparagus, boiled eggs (crumbled), grated chesse (I always use cheddar, although some of my family use velveeta), saltine crackers (crushed) and cream of mushroom soup (diluted w/half a can of sweet pea and/or asparagus liquid). I normally make this with two "layer sets" before pouring on the cream of mushroom soup. Work the mushroom soup into the casserole slightly. Bake at 350 degrees until done, about 45 minutes, but I really just watch until it sets so time varies.

    I'm so happy I thought of a dish that you may be able to eat. Most I thought of contain some type of meat, but since I know you aren't vegan I think this would work for your family. If you decide to try it.

  5. I LOVE CAKE BALLS (DON'T HAVE A BETTER NAME FOR THEM). BAKE A CAKE MIX IN A 9 X 13. WHEN IT COOLS, TAKE OUT OF PAN AND CRUMBLE IN A BOWL. THEN MIX WITH ONE CAN OF FROSTING. FORM THIS MIXTURE INTO BALLS WITH A COOKIE SCOOP AND THEN DIP IN MELTED CHOCOLATE..... YUMMY!!!!

  6. Here's my favorite:

    Irish Creme Bread Pudding
    Ingredients

    o 4 1/2 slices French bread, thick, cut into 1 inch cubes ( or substitute Irish soda bread recipe #53895)
    o 2 tablespoons butter
    o 1 teaspoon vanilla extract
    o 1 cup milk, scalded
    o 1 pinch ground nutmeg
    o 4 eggs, beaten
    o 1 tablespoon dark brown sugar
    o 1/2 cup white sugar
    o 1/2 cup raisins
    o 1 cup Baileys Irish Cream

    Directions

    1. Preheat oven to 300 degrees.
    2. Butter one 2-quart casserole dish.
    3. Prepare a water bath for the 2-quart casserole dish by placing a larger dish with water in the oven.
    4. Place bread cubes in the 2-quart casserole dish.
    5. Beat together the eggs, sugar, and vanilla.
    6. Slowly add the scalded milk and Bailey's Irish Cream.
    7. Pour over the bread.
    8. If desired, sprinkle with brown sugar, nutmeg, and raisins.
    9. Place the casserole in the water bath and bake for 50 to 60 minutes or until a knife inserted in the middle comes out clean.
    10. Server either hot or chilled.
    11. When You take the pudding out of the oven, if the pudding seems to be dry, you can sprinkle some Bailey's over the top to help make it moist.
